Artichoke, a gourmet vegetable is a perennial thistle which originates from the Western Mediterranean in ancient times. ARTICHOKE Green globe is most common Australian variety, will suit a wider range of climates. The flower bud has been eaten as a vegetable since ancient times. It grows to 1.5m tall and 1m across, within 5 years. Cut buds when heads are tight, boil until tender.
Sow after last frosts in temperate climates in a well-draining, well limed soil.
They prefer an open, sunny spot. Artichokes need a chilling period to produce buds. If growing in hot humid climates sow in Autumn
and dig up roots during summer and put in fridge to be planted out during Autumn.
Optimum germination temperature is 20ºc.
